Our venison is produced from wild, free-living deer roaming the estates and forests managed by WHH and is carefully selected and handled to ensure a top quality product. We take food provenance seriously and ensure all our venison is fully traceable. An annual harvest is taken each year from our wild herds, which is calculated after analysing the land’s ability to sustain them as well as revising the estate’s environmental objectives in the forests and mountains. The selection of each cull animal is carried out by experienced stalkers in line with best practice. Thereafter, only the very best venison is supplied to the customer with the remainder being left for sea and golden eagles.
